This was honestly one of the best things I’ve made, it had everything! You have to try this. If you don’t want to make it plant based you can just use dairy products and regular cheese, I think it could be nice with feta cheese or mozzarella. Serve with a salad and you are set!


INGREDIENTS (Rolls, filling & tomato sauce)
- 4 medium sized aubergines
- Sea salt
- Olive oil
- 180g curly kale
- 0.5 large leek
- 2 garlic cloves
- 1 dl green pitted olives
- 1 dl black pitted olives
- 1 dl oatly creamy oat or creamy oat fraiche
- Coconut oil to fry in
- 1 can of crushed tomatoes
- 1 tablespoon tomato puree
- 2 tsp gluten free soy
- 1 tsp apple cider vinegar
- 1 tsp maple syrup
- Fresh oregano and basil
- Sea salt, black pepper and chili powder after taste
- 1 dl grated plant based cheese*
Set the oven to 175°C. Cut the aubergines to long slices, about 0.5-1 cm thick, and salt them slightly on both sides. Place them on an oven plate and let them “drain” for about 10 minutes. Then, place the oven plate in the oven until the aubergines are soft which takes about 10 minutes. Take them out and let them cool down so that you can touch them.
In the meantime, chop the kale and leeks and fry them with coconut oil in a pan. Roughly chop the olives and pour them into the pan together with the oatly cream and finely chopped garlic. Let the mixture simmer for a few minutes. Taste with salt and pepper. When you’re happy with it and it feels creamy, take it off the stove and let it cool down.
While waiting, boil the ingredients for the tomato sauce. Simply just add all of the ingredients (NOT THE CHEESE, it’s for topping) in a skillet and wait until it starts boiling. Lower the temp and let it boil gently / simmer for 10 minutes. Sometimes it is necessary to add some water, so that it does not burn.
When the tomato sauce is done it is time to fill the rolls and roll them up! Add some of the filling towards the very end of an aubergine slice and then roll it up. If the slice is very thin you can add two slices together. Place the rolls in an ovenproof dish. When all the rolls are done, pour the tomato sauce on top and add the grated cheese on top. Put it in the oven for about 10-15 minutes and then it is DONE!
